AMI BIOS Update and x64 os

Greetings to all community
i have a pc with AsRock n68-vgs3 /vs3 motherboard
after a 3 consecutive blackouts my disks got damaged so i had to format(i had windows 7 ultimate x64 installed)

now i cant only boot and install from any usb pendrive beside my old windows XP sp3
both windows 7 and windows 8 (original iso installed ) pendrives fail to boot for random reasons

tried:
update and reset bios
clear cmos
format using Partmanager
installed windows xp

I wanted to install windows 8.1 x64(currently x32,i managed to copy files from iso to hard disk and it barely installed) but i need to activate UEFI,so i downloaded and upgraded bios with flash utility.

but it says:
bios.jpg

so i need to know how to change bios to boot in UEFI,to put win 8 x64,to use my 6 gb ram and have compatibility with apps and stuff
any help would be greatly appreciated

i did,i dont see the option there
only :
Enable safe boot
i also activated usb ,usb 2.0 support and usb legacy enabled
still no results,the x64 os refuse to boot or install
