Gaming isn't a priority at all I don't really care about super settings and overclocking, actually I can't with the xeon. I want a music production and video rendering workhorse over everything. Would buying a lesser video card and adding 32 gigs of ram be a better option for me?

I know I've been pulling my hair out trying to figure out the best option since I'm new to this. I guess the i7 will be a little faster but it holds its value a lot better as you can sell them 2 years down the line for almost the same price. And I'm also thinking about the future if I did ever want to over clock I would have the option
