Looking to build a PC under $800 (Will go to 850 if the part that puts me over is way better)

I would like to know what parts should I get for a PC that will play modern games easily and run servers as well (MC, SB, the dead linger, AoE, RoN, etc.)

I would like to have a intel chip and a NVidia GPU but if other parts are way better I am willing to forgo my love of both. The lower the better but I want to be able to run Skyrim Ultra HD with FPS 60+, Rome 2 with Ultra HD FPS 60+, Space Engineers Ultra 10+ people FPS 60+, and Flagship (when it comes out) Ultra FPS 60+

The lower the cost the better but, if raising it a little will get me way better performance I will take it (though I am on a very tight budget as I have had a major surgery and have been out of work for about 3 months now)

My current Specs:
OS: Win7 64bit
CPU: Intel i5 Chip 650 @ 3.2GHz quad core
GPU: NVidia GeForce GTX 650 1G memory
RAM: 8GB DDR3
Monitor: HP 2710 Series Wide LCD Monitor (wouldn't mind keeping this one as it's 1920x1080 and 16:9in)

I would like to have Win7 as my OS again and my internet is wired to my PC via a Ethernet cable, thanks for any responses.

EVGA 600B 600W 80+ Bronze Certified ATX Power Supply http://pcpartpicker.com/part/evga-power-supply-100b10600kr $44.99 @ NCIX US

Prices include shipping, taxes, and discounts when available $798.44

If you live near a Micro Center you can pick up the CPU for $199 and a similar motherboard cheaper as well. "Pick up only"
If you Ram is DDR3 1600mhz or better you could reuse that as well and knock $70 off.
Reselling your old CPU/GPU and Motherboard you could probably get around $100.

$608 to $628 after that

You power supply might be capable provided its not a OEM and above 500 watt.

amd fx 8350 - $179.99 (the i5 you picked is 5 years old couldnt run bf4 at 60 fps21qqqqqqqqq
Msi 970 Gaming - $99.00
Amd r9 280 - $199.99 (mantle)
Kingston hyperx fury 8gb - 79.99
segate barracude 1tb - $59.99
corsair cx 600 - $60.99
Windows 8.1 - $99.99 (gives you better preformance than windows 7)

comes out to about 800 sell all your old parts (if you have any) and you can play all games 50+ fps on ultra settings

but you also need to be realistic intel and nvidia are not for the budget minded game they are for the people with 1000+ dollar budgets amd wioll do what intel does just as good with a small bit of tweaking if any and you will now have 8 cores instead of "4" and a nice system that wont bottleneck at all.

Yeah you're gonna have to get rid of your love for Intel chips to stay on budget. Plus AMD lower-end processors are just better. The AMD FX-8350 is probably the best processor on the market for less than $200. To run games as well as you want to you're going to need at least a GTX 750 Ti GPU chipset as well. As far as the other parts you can make small sacrifices to lower the total price. Finally, I wouldn't try to run a server on a <$1000 build at all. They require serious hardware. Hope this helps!
