I use Adobe Creative Suite on a regular basis. I do graphic design and often use huge RAW

photos in the process. Myself and my two kids have dozens of video games we play fairly regularly.

My question is do I really need 1TB or can I use a more affordable yet adequate SSD.

Solution
I would just get a 256 GB SSD and load Windows/applications/games on there and keep your 1 TB drive. Unless this is a laptop, you should have no issue doing this.

Or just get a 500gb 840 evo and spend like $250.

I am still a bit unsure about the Samsung 840 evos, You could go with either the sandisk ultra 2 or the crucial MX 550 (or MX 100). You can get a ~256 GB one for about 100 for either the sandisk or the crucial or get the 480GB sandisk ultra II for $200.
