Main Purpose Gaming. Will eventually be getting SLI so if you can also tell which MOBO is better for that, would be great.

If its for gaming, I would go on Option No. 2, Intel D. Canyon still a beast when it comes to gaming.. the bucks you'll save you may get Asus Maximus VII Formula or Extreme instead..

I would not go to Corsair RM psu, its secondary caps are low quality.. Get HX or AX series, or rather Seasonic of XFX psu.

I decided not to skimp on anything so I don't encounter any bottlenecks or trouble when I upgrade to SLI.
Is there anything that I should Consider upgrading from this current build? If im spending this much on it I might as well make sure it is worth it.

Really? I've always been told that Water cooling gives better temps, and is quieter.
That PSU had good reviews on Newegg ^_^
Can you give me some brand/models that you would suggest for the cooler and psu.
 
Nope that h90 will be almost 2-3x as loud as an air cooler tha twill cool better. TO get better than air temps you need to spend $120+ on water cooling.

FOr the PSU go Antec, XFX, Seasonic 850w.

For the cooler I would get a Noctua NH-D15 or a phanteks ph-tc14pe. Both are MUCH quieter and beat the h90 is cooling performance.

An Evga 850w B2 would be my pick for PSU. NZXT Havik 140 is a good cooler too. No need for that expensive of a motherboard either. A Gigabyte Z97x-gaming 5 is plenty. 2133 ram is unnecessary too. Go with a 1600 or 1866 kit, unless prices are super close. Take money saved and get you a nice SSD like a Crucial MX100 256gb. ;)

Option 2 is best selection imo..
Except for that psu... RM series used bad secondary caps, that's makes it pulled out from Corsair top of the line psu, you got great selection of parts there except for that psu, RM only great feature is its very low noise under load, quietest psu.

Anyway, if you insist on RM, no worries RM has 5yrs warranty and Corsair back it up with good replacement policy.

Case: Raidmax Viper GX Mid Tower Gaming Case (Looks cool, and was $100 less then the other case I had selected.)

Cooler: Cooler Master Hyper 212 EVO (This thing quiet and works good? Kinda worried because the price is cheap)
Motherboard:ASUS MAXIMUS VII FORMULA
RAM: 16gb DDR3 2133mhz (8x2)
GPU: EVGA Superclocked GTX 980 4gb
PSU: ThermalTake ToughPower 1000w 80+ Gold Semi-Modular (Was on sale for the same price as a 850w)
HDD: 1 TB Western Digital Caviar Black 7200RPM
OS: Windows 7 Home Premium

It is a solid build, DCanyon and Maximus VII is a great combo..

But again sorry.. not good choice of psu brand, better get any brand/model in Tier One list if you want best build for your system: :)

I know 850w is enough for this build but I will be upgrading to 2 GTX 980's eventually and want to make sure I have enough power for it now :)

Also for the PSU, I am going off of cyberpowerPC's list and They don't seem to have any of those PSU's you listed.
their list contains mainly Corsair, EVGA, Thermaltake, AZZA, and NZXT PSU's. FOr the 850w category they only have the Corsair RM850 which I heard the RM series is bad from you guys.
The next step up are the 1000W PSU's which include the following:

AZZA Titan 1000w 80 plus gold, Corsair RM1000 80 plus gold, Thermal Take Toughpower 1000w 80+ gold, Cooler Master Silent Pro M2 1000w 80+ silver
