Opinions needed on my build before I purchase - Intel Xeon E3-1231 V3

I want to keep the case(personal preference), I'm running windows off the solid state and the other for files. No overclocking

In terms of use it'll be general (Microsoft windows programs), running adobe graphic design programs and not too much gaming but if I do max age of empires 3 or something oldish

My budget was around $1,200 AUD

Yes, good choices there. The one suggestion I'd make is to use an ATX motherboard instead of micro ATX. The H97M has sufficient slots and so on, but for a workstation there are advantages to a roomier board - can fit a larger GPU, a bit easier to assemble and work on, and there's better air circulation when used in a bigger case. On that subject, I always like a generous case- it might be a few cm larger in each direction, but there's more room to work, add drives and the better air circulation.

As for the motherboard you can have the air and space advantages plus the faster Z79 chipset:
