This depends; if it was a quick format some software might help you recover the files. A full format overwrites everything

I can't quite understand the question - How could you have had 1000 partitions on one hard drive? Can you provide more details such as
What OS are you using
How is / was the drive formatted (FAT, NTFS, whatever)
How many partitions of what types (primary, logical) were on it before
Have you written new data to the drive yet
Do you have a working computer that you can attach this disk to for running recovery software?
