I heard that OS X is like Unix only has a GUI. Is this true and if so could I run OS X applications on UNIX.

Linux/Unix software will not run on OS X unless it is recompiled. Programs with a graphical interface will also need X-Window to be installed on the OS X system (which is not the default). In general you cannot take a program from one Unix system and expect it to run on a different system without at the very least recompiling the program from source code. Most programs will require some additional changes although these are often automated in the source distribution.

OS X is one of the very few OSs that has the right to be called Unix.
