Solution
Yes, all your old files on the old HDD will be accessible to you once it is in the external enclosure. However, what you mean by using the term "will (they) still work" is another discussion.

All your old data files will be completely useable. But if you are thinking of using any applications software now stored on that unit, the answer is no. This is because of the way Windows "installs" applications. Installing any software under Windows copies all sorts of files to the HDD where it will reside. All your old data files will be completely useable. But if you are thinking of using any applications software now stored on that unit, the answer is no. This is because of the way Windows "installs" applications. Installing any software under Windows copies all sorts of files to the HDD where it will reside. Then it places a bunch of entries in Windows' Registry containing specific info on how to use that software and, particularly, where it is. If you now take that HDD unit and mount it in an external enclosure, then click on one of those applications, Windows will expect to find it and its many associated files on the C: drive, if that is where they were installed. But now they on the G: drive (or whatever the external is named).

So if you want to keep using applications currently installed on that old HDD unit, you will need to re-Install them on your new main drive so Windows can find those new installations from their new entries in its Registry.
