5 1/4 bay fan controllers if you want them to run at speeds other then 5/7/12volts.
Not sure what you mean by modular connectors. The cables you listed will all plug into a standard molex connector. Especially found on non-modular supplies. Even modular supplies will have a few of older style molex and floppy cables that you can plug in, then your adapters.

Actually the motherboard would be the most important thing to post in this matter. You would know how many fan outputs their are, but you can just get some of these.
