If I add a M.2 drive for windows, can I remove os from old ssd and still use installed programmes?

Hi wondered if anyone can help, having troubles with windows since a mobo/cpu upgrade (Tried to wing it and not do a fresh install but going to have to bite the bullet after all)
Is there any way I can still use the current drive for programmes and just add another drive for OS? (Then remove windows from this drive)
Trying to avoid having to re-install everything if possible.
Thinking M.2 because I can now on new mobo lol, but another ssd is an option if that makes any difference.

Gutted. Oh well, if it has to be done it has to be done. Can I install only the os to the new drive and when I re-install games/programmes etc do that to the old ssd. (To avoid this in future?)
