Yes you will be fine with a single 970. You even have headroom for overclocking - that is a decent power supply.

Yes but they will never consume 500W. The 970 and 980 are very efficient cards.
http://www.guru3d.com/articles_pages/msi_geforce_gtx_970_gaming_review,7.html. As you can see here, at full load the MSI 970 + (rest of system) only consumed about 280W. The card itself only about 168W max. Far far away from the advertised 500W minimum.

The PSU requirement with certain GPUs: 550 W is more than enough for GTX 970
