How to Secure IP Camera Video Data

I'm in the process of building a home security system composed of 4 IP Cameras, a 8 port PoE switch and a server. I haven't decided whether to run Windows or a Linux variant on the server yet. The cameras I'm using are Dahua IPC-HFW4300S and come with software for Windows so I was leaning that direction.

My question is what is the best way to secure my video files from being physically stolen along with the rest of my stuff?

I live in an apartment so physically securing things behind secure doors would be difficult. I've considered Mangocam offsite backup, however for 4 cams at 4 fps it is $10 a month. Not terribly expensive, however 4fps is pretty low. I do have 100GB Google Drive and potentially could save video files to that...

Any ideas are much appreciated.

Can you set your cameras to e-mail on motion detection? I have my cameras e-mail JPGs on motion detection. The e-mail server is off site, and it is a small amount of data, so it will be uploaded quickly. My Panasonic cameras can be set to do X frames before motion and Y frames after. Send about 10 JPGs about 1/2 second apart.
