Ok, So I have access to two different Motherboards and CPUs.
I need to know which would be a better fit.

My current setup:
H81M-E ASUS MOBO Micro ATX - LGA1150 (2 RAM slots)
Intel I5-4440 3.1 to 3.3 Turbo
GTX 760 2GB

Or this possible set-up:
Dell MOBO Full ATX (Not sure on the model) - LGA1156 (4 RAM slots)
Intel I7-870 2.9 to 3.6 Turbo
GTX 760 2GB

I know the I7-870 is older and there probably isn't much difference, but it does clock higher at turbo than the I5 and there is also 4 RAM slots.
My main purpose is gaming. Is there much difference? No difference? A big difference? What would you guys choose?

Thanks for the help!

Nah stick with the i5 4440. It's considerably better than the first gen i7. You never want to go backwards when "upgrading"

Completely agree, that would be a downgrade going to the i7-870.

The i7-870 is now a very old processor and it's not up to par with current CPUs like the i5-4XXX and i7-XXXX, you're better off going with the former.

mate stay with the i5, that i7 is a first gen, it uses alot more power than the 4th gen i5
I'd say that i5 would also be faster also
also Dell boards aren't great compared to others.
that board may only have 2 slots, but you can drop in 2 x 8GB sticks which is plenty.
