New "High End" System Build Request: Triple Monitor (Not 4K) gaming, budget around $2500

Goal here is to play basically any game at high-ultra settings on 3 monitors. I'm not really interested in a single 4K monitor, goal is to have very wide-angle/peripheral for flight sims, etc.

Right now I've purchased an SSD for the OS, and have my high-end gaming peripherals from my current build.

Needed:

Anything in the case, case itself, monitors.

Monitors: Prefer at least 22-23", 1080p gaming capability is minimum, prefer higher resolution if possible (current system uses a single Samsung 2048 x 1152 23", so I've grown accustomed to the higher pixel density). I can do the shopping for the screens but I'm not sure what kind of hardware would be needed to drive the performance internally

From what I've been reading I should look at a dual-GPU SLI setup but I'm not sure these days what is giving best bang for buck. Last system build was in 2009, so I haven't kept on top of what hardware is doing. Looking to liquid cool if needed as well.

Looking to get a build list together in next 24 hours in order to take advantage of some black friday/cyber monday deals.

Alrighty, I've put together a build here. A few things:

I don't have storage or optical listed because I already have those parts.

I've merged some aspects of both lists submitted, thank you all for feedback.

For monitors I've gone with the ASUS 27", because of thin bezels plus tilt ability (saw a Samsung 27" and I generally prefer Samsung monitors but couldn't fine one at appropriate price point with tilt features, I need the monitors to be able to tilt to 0 degrees for this OR have a mount option).

I've gone with MSI v-cards after reading vs ASUS Strix, I currently have an MSI 660 Ti and it's wonderful so I trust their work.

I haven't decided on OS yet, I have W7 home, should probably get 8.1 for this though right?
