Dual GPU vs Single for medium gaming

I have recently bought a gtx 590 Classified off Ebay for $300, and have been a little unsatisfied with the results. It seems like not much of a performance boost from the 570, and I was wondering why. I mean, for the games I play, being Minecraft, TF2, Garry's Mod, and Terraria, I don't need a very good card for, but I also do some recording once and a while, and Fraps just seems to like to lag me out in every single one of the titles.

So my question is, would my case for light gaming be better with a Single-GPU card, or is this just fine, because I can always overclock it. I am just baffled because Fraps brings my TF2 from 140 FPS down to 30 every time I turn it on.

Also, may I mention I also do some light content creation, Photoshop, After Effects, and I also run game servers, so considering that what is recommended? Also, my case has very poor airflow, and I'm on a budget.

32gb Crucial Ballistix Sport XT
Gtx 590 Classified
250gb Samsung SSD
4tb HDD
3 monitors (I don't use them for gaming), and a ton of accessories.
 
Solution
The GTX 590 is two 580s on one card and acts as if they are in SLI. To take advantage of both GPU's, the game has to support SLI, which can cause micro stuttering and increases frame time variance.
