Yes a full tower is always a better choice, cause you got plenty room for your components, good air flow, good cable management, will find easy installing components and maneuver inside the case and so on.

No need for a liquid cooler unless you are a crazy OCer, besides air coolers are safe and no fear of leaking. H60 is a good cooler, you can consider "Cooler Master Hyper 212 EVO" also, cheap and bang for bucks. Thanks. Good luck.
Some suggestions : Stay away from RM series of PSU's, AX,TX,HX are better ones from Corsair OR, XFX, Seasonic. If you plan on SLI for future than I would say go for 850W, just keep in mind the more you stress your PSU the more quickly it will die on you.

Both MB's are good, you could choose any, my personal preference will be ASUS Z97.

16GB RAM will be an overkill, so stay with 8GB or max 12GB. And from top of my head, your CPU's max limit is 1600MHz, so 1800 is unnecessary, until and unless you OC.

I would choose a FULL TOWER case if I were you.

Good luck.
