Looking for help with best SATA Raid setup

I have a Asus AMD chipset Sabertooth 990fx MoBo. It has 8 sata connectors (6 AMD serial ATA, 2 ASMedia)

My setup:
1 SSD (with windows 7)
1 BlueRay DVD Rom
2 1TB Western Digital drives in which I want to mirror with a RAID1
2 750GB Western Digital drives in which I want to also mirror with a RAID1
1 500GB drive & 1 300GB drive which I want to stripe with a RAID0

I am confused as to my capabilities with the ASMedia SATA connectors as they do not have much control in the BIOS.

Can someone please give me a recommendation as to which SATA ports to use.

That makes great sense, but don't all the drives have to be the same for a raid 10?

Also, can I setup a RAID on the ASMedia or run my OS and Blue Ray from them?

No; you can partition off 4 identical size drives from larger drives, put them in RAID10, and still have the leftover partitions for separate storage.
Your RAID array should function just as any other drive, meaning you could use it as your boot drive (for your OS).
