I'm currently running all my HDDS in IDE mode. I just got my first SSD and plan to do a clean Windows install. If i disconnect all drives, Attach SSD, switch to AHCI mode, install Windows then re-attach all my other storage drives.. will the data still be there.. and readable?

Yes.

The operating mode of the storage controller affects only the driver's method of communicating with the storage controller and attached storage devices. It does not in any way alter the contents of the attached storage devices.
