Is my GPU not working properly? Random hard freezes on certain games

I have an hp p7-1110 that has an i3-2120, 6GB RAM, corsair cx600 psu, and a sapphire 7870 XT gpu. Now I can play most games maxed with no or low AA on 1680*1050, and get solid 60fps.
In some games however I constantly get hard freezes (no back to windows screen, BSOD, or error of any kind), meaning I cant do anything besides holding the power button on my pc to shut it completely down.
For what I understand, if everything is working as it should, then if I play a demanding game (either cpu or gpu oriented) I either should run the game fine or just see the framedrop being reduced. For example I started playing Skyrim, and I had to tweak it in order to make it play properly. Whenever I played on fullscreen the game will stutter heavily, but if I play on windowed mode the game runs flawlessly maxed at 60fps, so I tweak it by using a fake fullscreen option. I also use 3 mods, but 2 of them are just for bug fixing and stability (unofficial patches). The third one is a mod to see a more detailed map that I dont think affects the stability of the game in general. Game is decently optimized for pc and my cpu should be enough for the graphic resolution and settings Im using it with.
I just want to know if there is a free program, windows, or amd feature I can use to see if my GPU is working as it should. I read that by running a 3D mark test and stressing my gpu limits I could see if the pc shuts down or not. If it does then something is wrong with the gpu, if it doesnt then I should just see a lower fps on screen. I downloaded the free demo and used the Skydiver test (for mid range pcs). My score fell a little less than half of the max points I could get and I understand that.
By the way, I have played games like Bioshock Infinite, Batman Arkham city, Doom 3 BFG, GTA4, Tomb Raider 2013, Tomb Raider Underworld, Dead Island, Darksiders, Assassins creed 2, and never encountered problems with them. The ones that give me the hard freezes so far are skyrim, hitman absolution, Anna, and Alan wake.

It SHOULD bluescreen for a CPU problem, but it depends vey much on exactly what the system was doing the nanosecond the error occurred and exactly what error occurred, easiest way to check is just to see how hot it's getting and work from there.

You must know that the GPU has 3 speeds programed into them, Energy savings... So don't freak out when you see your GPU Speed in Desktop and Video streaming.
 
Not sure about all of them but I know Skyrim and Alan Wake are both very demanding of the CPU, Alan Wake because it does some graphical post processing on the CPU and Skyrim because it's doing AI/online work on the CPU.
My current guess is the CPU is overheating, but check the HD7870 temperatures as well, most of those cards came with a single fan cooler that struggles to keep their temperatures down-HWinfo will report both CPU/GPU temperatures.
And GPU-Z can be left running to monitor the GPU temperature during gameplay, you can also get it to log those readings, just check the 'log to file' box at the bottom of the 'sensors' tab, that way if you DO get a crash the readings will still be available.

Ill definitely use the gpuz program, thanks to you both. But about checking if the cpu is at fault I have one question. If the cpu wasnt working properly, or is stressing too much, wouldnt the system give me a BSOD instead of a hard crash/freeze? I read a BSOD or an auto reboot is what ussually happens when the cpu gets overheated.
