Hello! I am about to upgrade my computer and I was thinking, the motherboard I will buy has quad channel support and it has 8 DIMMs, what would happen if I put 8 identical ram sticks? Would it work faster?
No. You will achieve peak performance with 4 identical DIMMs. Installing 8 may or may not be slower but it won't be faster. The reason to use all 8 slots would be to increase the amount of memory. Installing 8 4GB DIMMS would be less expensive than 4 16GB DIMMS, but would not be any faster.

You want the smallest number of sticks (minimum of 2) in the total amount you want so there is less stress on the MC (memory controller) i.e. 8GB go 2x4GB rather than single channel 1x8GB or 4x2GB , for 32GB go 4x8GB rather than 8x4GB
