Will this build be able to run Arma 3 and DayZ SA at good quality?

Ultra settings? No definitely not, but at high, yes probably.

Remember both those games are HORRIBLY coded and even GREAT computers can max them.

I'm not too hell-bent on maxing it out. I'd be perfectly comfortable at high or very high with around 30-40 fps

You won't get very high more than likely without lag spikes, but high should be manageable at great FPS.

Definitely will be able to run it at playable frame rates since you have a strong Intel CPU. Not guaranteed that you max it out. But on high settings you will be more than happy
