Is this a good gaming PC build for ~$1000? Any advice would be great!

If you have any helpful tips about the construction or any parts I should switch out, just type it!

Everything looks fine, just the PSU. DO NOT, I REPEAT, DO NOT get RAIDMAX PSUs. They are absolutely terrible in terms of quality. I would get something like Corsair, Antec, Seasonic, etc.

As for your hard drives, I would recommend getting another SSD. The V300 tends to be lower end, and it's not much faster in terms of read and write speeds, even though latency is better. As for your storage drive, I don't like Seagate drives in general since they die quick.

I know the RAM is kind of overpowered, but the price is not expensive, so I just add it in anyway.

The PSU is a steaming pile of system damaging garbage. The Crucial MX100 is about the same price and its a better drive. Other than that it's not too bad(i'm not a fan of asrock, others seem like them though).
