yes and no.

For games that support it, then generally yes, you can get a little extra juice out of your system than a single large card. This is especially useful if you want to spread out your purchases over time. But practically speaking it is generally best to keep things simple with a single card because not every game has particularly good SLI/xFire support, and it can introduce just as many problems as benefits.

I would suggest getting the largest single card you can afford. If it is not quite enough then save up for a 2nd card over time and run it in SLI/xFire. This way you are guaranteed decent single card support, and for bigger games that have better multi-card support then you will really have lots of power at your disposal. Plus bigger cards tend to have less down sides in the way of stuttering and such.

Note also that RAM is not shared across linked cards. If you get 2 2GB cards then you only have 2GB of vRAM to work with, and that will not be enough for high end games in the near future. I would stick with a minimum of 3-4GB of vRAM on new card purchases at this point.
