How much data is consumed for playing online on Xbox one and PS4 ?

This will vary from game to game to be honest.
It could range from 20megabytes and hour upto a few hundred.

Suppose it takes 100 mb per hour, so I play around 7 hrs in a day , so its 700 mb per day for me , so for 30 days , its 21000 mb aka 21 gb per month right ?
I already have an unlimited internet for my downloading and browsing etc. I am taking this secondary internet of 32 mbps for 60 gb only for playing online. So based on that calculation , 60 gb will be fine right ?

It should. I think you also use less bandwidth when you are not the host of a large game.
Most ISPs allow tracking you your internet usage so you can try a day and check it the next morning to ensure they have had time to update.
Some routers may also be able to track usage.
Please also take into consideration that games download patches. these can sometimes be rather large.
