Quit watching those guides. I think they confuse you more than they help you.
Short answer: YES
Installing the OS on another disk will not influence any of the files on the 1TB drive.

If you want to run the SSD as the OS-drive, setup AHCI from BIOS (press delete during boot, just spam that thing, find SATA-setup, make sure your boot priority has the SSD as number 1, save changes) reboot on your install media (USB/DVD), install windows to the SSD drive (you could disconnect the 1TB drive to cut down on confusion), when windows is installed, power down, plugin your HDD, boot, there you go.
No you can start deleting the operating system from the 1TB drive, windows will not give two shits about the 1TB drive also having an operating system...

To make things very easy you can simply clone your existing drive. Acronis is very good cloning software, but a free version like Macrium Reflect is good too. Its very easy, software is self-explanatory. Just make sure you have less than 500g on your tb drive before you clone to the other one, perhaps delete big games if you do.

This will copy everything over, so all you have to do is plug it in as the main drive and boot up. From here you can boot into windows on the ssd, then use diskmgmt.msc (enter that in start menu search bar) to format the old terabyte drive and set it up as a file drive.

1: Boot into BIOS "SATA MODE SELECTION", choose AHCI if not already chosen, windows 7/8 has the drivers included, so you won't need to install the during OS-install
2: Boot your install media, choose your SSD, create partition/initialize drive, install windows.

That's pretty much it.

If you follow Xyos advice and AHCI is not currently the SATA mode, you have to start windows in SAFE MODE to force install of the AHCI drivers, because, AFAIK, they won't be installed if IDE was the SATA-mode during the install of your current OS on the 1TB drive. Your boot will fail if SATA mode is AHCI and your OS was installed while it was IDE.

I'd prefer a clean install, howver Samsung has an excellent tool for cloning the drive, if you choose to go the way of Xyos
