Help with 3D workstation CPU/GPU combo

I primarily work with Maya and photoshop. I'm working on my first build and I'm hoping to ultimately use 3 monitors and do very little gaming.

So my situation: Originally I was looking at an i5 4690k CPU with a Asus Z97M-PLUS mobo and living off of the integrated graphics until I could afford the AMD Firepro W5100 GPU.

It's now occured to me that the Xeon 1231 v3 could be better for my purposes since I have no intention of overclocking and could benefit from the hyper-threading. By doing so, I could downgrade my mobo to the ASRock H97M PRO4 and recoup the extra cash.

The problem is that the Xeon does not come with integrated graphics and would require me to buy a GPU immediately, which I can't afford. A little research revealed that the Nvidia Quadro K600 supports performance boosts to the applications I use most and is cheap. However, it is very outdated.

So, my question: Do I stick with my plan with the i5 and hold out for the better graphics card, or is the Xeon hyper-threading enough to warrant going with the cheaper GPU.

All thoughts and opinions appreciated!

You could always go for the e3-1245v3 or 1246v3. They come with integrated graphics and are still cheaper than the i7 47xx they are based off of.
