Will The Asus M5A78L-M/USB3 work with the amd 8320 out the box?

Solution

Not necessarily, but you'd have to go through the extra step of having to do a bios flash...

As long as your board has bios 1401, it will be supported out of the box. Rev. 1401 came out in Sept 2012 so a lot depends on the manufacture date for the board and when you actually bought it.

I'm not sure why some would say it's 'not a good fit' as the 'fit' depends on exactly what the use case is for the computer in the first place.

Basic server? Six sata + built in GPU.
Decent gaming system? Pretty powerful CPU + 1 PCI-e for a heavy duty video card.

I think it'll make for a decent system and Asus builds some solid mobos.

So if I were to buy the board say from amazon.. it would all be by luck? Thats so frustrating...

Not necessarily, but you'd have to go through the extra step of having to do a bios flash. Fortunately that's gotten quite a bit easier and much more straightforward than it has in the past.
