I've found a Corsair RAM kit that says it's quad-channel, however it only contains four DIMMs (4x8GB). Is it possible to purchase another one of these kits and fill up the other four DIMM slots?
If your motherboard supports 64GB you should be able to. Unless you are running multiple VMs or have some specialized application, you won't get much value from that much RAM in a desktop. You will need Win 7 Pro, Win 8 or Windows Server to utilize that much RAM.

You can try it, no guarantees the two sets will play nice together, best bet for 64GB is a single set of the full amount of DRAM you want, then you are assured all are tested to play together
