Reading the sticky here as well as other forums will help you figure most bits out, and as for fans go pushpull with slower fans and noise wont be an issue, and if the 360 is an option then go for it because over radding (having more rad than you necessarily 'need') also allows slower fanspeeds, I seriously overrad on my loop and its silent as you like, and fourteen of them are Xspc's 2k rpm units, I also suggest you use fancontrollers on all your fans because with a little experimentation youll find the sweet spot for best cooling and silence :)

I don't think so, I got the EX360 Kit and its really quite good, I'm getting temps of 60 Degrees in OCCT with my 4770K@ 4.4GHz 1.171 V

The only thing I'd complain about is the fans are REALLY loud, so either get a fan controller or you could like me get 3 noctua's, but they set me back £50.

Keep in mind you will ontop of the kit have to buy the coolant, I'd recommend just getting distilled water and using a kill coil instead of the coloured ones.

If this is your first time watercooling, then enjoy! My tip is to take your time, and especially with the tubing as I messed mine up first time round. Good luck!
