So I upgraded my Dell N5010 to use a 256gb SSD as the main bootable hard drive. I replaced the CD-ROM drive with a caddy that uses my 500gb stock HDD, so I have two internal hard drives now.

My question... can I replace the 500gb HDD in the caddy with say a 2-3 TB HDD? Is there a certain limit that Windows 7 64-bit will recognize? Will it recognize all 2 TB or will I have to format/tweak or something?

If the OS is running in legacy mode, with a MBR partition table, the limit is 2TB. If you have installed it in UEFI mode with a GUID (GPT) partition table, there is pretty much no limit.
