x99 with 3 way crossfire. question about PCIe moduels and other stuff

I have a question about crossfire and configuring stuff around my setup.

I recently built a new computer with the following specs:
MSI X99S SLI PLUS, Socket-2011-3 Crucial DDR4 Ballistix Sport 16GB 4x4 GB 2400 Mhz Intel Core i7-5820K, Socket-LGA2011-3 6 core 3,3 Ghz (soon to be overclocked) watercooled
3x ASUS HD 7970 DirectCU II with watercooling blocks. 3 way crossfire.
Corsair RM1000, 1000W PSU ( in know this is to low wattage to run my system. 1500w will be installed soon)
2 x 2 TB WD harddrives
2 x Crucial M550 256 GB SSD
Phanteks Enthoo Primo Big Tower

Watercooling stuff i dont have names on. But it is a small pump with enough force to have a good flow of water on low/medium speed setting.
Small water tank with customisable LED colours that is placed in 2 5.25" bays (you can see the water flowing in the front view of the cabinet)
1x EKWB EK-CoolStream RAD XTX 360 Radiator
1x EKWB EK-CoolStream RAD XTX 240 Radiator
5 x Cooler Master JetFlo 120mm LED
5 x Stock fans from Phanteks that came with the case.
NZXT Sentry 3 Fan Control 5,25" Bay

I am wondering about the different PCIe Modes you can configure when running 3 way crossfire (as far as i can understand you can use atleast 2 different modes)
Can someone explain what is the difference between the modes and what the bennefits and or drawbacks are? I want my system to run in the most optimized way possible.
I have read many different articles and forum posts about crossfire, bottlenecking and x99 PCIe modes. but i cant seem to grasp the consept and how to configure it. and if it is neccecary for my setup in the first place.

Also, does anyone have a different program for monitoring load and temperatures of CPU and GPU than speedfan? prefferably with some grapical view of this, not just numbers.

TL;DR: I have just built my first fully watercooled computer and would like some advice for configuring PCIe modes to best optimice the systems performance in games and other programs.
Also if anyone has any other tips for my system that could improve performance of my GPU's or other components that would also help me greatly :)

Also. do any of you have recomendations for the new Power supply?
The Corsair AX 1500 seems overpriced, but i have not used another brand in the past so i dont know what to exspect from silverstone, Platimax, EVGA supernova and other brands that have a ~1500 watts PSU.
Any recomendations?

EDIT: Do not buy EVGA supernova 1300 W. it fryed my harddrives.. two SSD's and two harddrives..... -.-
