Upgrading from 4GB to 8GB RAM; current RAM stick no longer being sold

So I put my PC together about a year ago using 1 4GB stick of HyperX Blu 1600MHz CL9 RAM, with the intention of adding another stick when I felt I needed it (it was a pretty budget build). Unfortunately this RAM stick doesn't seem to be available to purchase anymore, Amazon lists a 'new version' available, which is the HyperX FURY Series 4GB DDR3 1600MHz CL10 DIMM. I'm under the impression that I shouldn't mix RAM but as the speeds are the same will it be alright to mix these two DIMMs?

There's always a possibility of compatibility issues when you mix sticks, even if they're identical. It's preferable to have a matched set, but people mix sets all the time with little or no issue. Really, the only way to know for sure is to try it. To minimize conflict possibilities, try to match them as closely as possible. The two you listed have the same size and speed, but different timings (CL9 vs CL10) - if they do work together, the board will probably default set both of them to the looser timing, but I you won't notice the difference.
