GTX 660 - SLI not working, Most of the options on the NVIDIA control panel missing

On my NVIDIA control panel, the only options that show up are "Set up stereoscopic 3D" and "View rating for games". I've uninstalled and reinstalled all NVIDIA drivers on my computer multiple times, it fixes the problem but only temporarily. It seems that this issue is always preceded by me using X-plane 10 (Flight Simulator, uses OpenGL, I don't know if that is what could be causing the problem) i'll uninstall and reinstall all nvidia drivers, all of the options on the NVIDIA control panel will be there, I'll turn on SLI and then run X-Plane but then when I turn my computer on again after shutting it down (after using X-Plane) all options other than the Stereoscopic 3D options on the NVIDIA control panel are gone, and SLI gets disabled. Now my computer is lagging.. I can't even move the mouse across the screen without it stuttering/lagging, I have a feeling this problem is related to the issue with my GPUs.

I know for sure that both of my GPUs work and I know that the SLI bridge is not broken or faulty, it appears that this is a software related issue but I just can't seem to find a permanent fix.

- 2x Asus GTX 660s
- 850W Antec PSU
- Intel core i5-4670
- Windows 8.1 (64-bit)
