Personally I would go with the single m2 ssd and 1TB HDD. I'm not 100% sure but RAID 0 with 3 SSDs is a little overkill and I don't think those SSDs support trim. Put your OS on the m2 and data on the HDD.

ok, but how about the downgrade in the motherboard..... the asus board is amazing for what i want, so is that worth the asrock board?
