sata3 will max out at about 500MBps where as the m2 sata will likely get close to 1gig ps.
if you have sata 3 theres no real benefit in using raid as 1 ssd will normally max out the connection. if its a good drive.

Personally I would go with the single m2 ssd and 1TB HDD. I'm not 100% sure but RAID 0 with 3 SSDs is a little overkill and I don't think those SSDs support trim. Put your OS on the m2 and data on the HDD.
