The Sapphire has a slightly faster core clock (1030 vs 1000). That will make a tiny difference, all else being equal. But I doubt you'd be able to tell any difference. And if you OC, that becomes irrelevant. Pick the one you can get at the best price.

But unless you game at higher resolution than 1920x1080, you'll never use anywhere near the 8GB. I have never used even close to the 4 GB mine has.

Anything about the PCBs? Are they reference or not? Otherwise yeah... but i consider that XFX's VRM temperatures are roughly 20º higher, that's why i'm asking does these 50 euros extra worth? By the way i will play at 1440p, i know it's overkill at the moment but i suppose that newer games will require higher VRAM (i am talking about resolutions higher than 1080p).

That's not quite correct. Each card will use its own memory to render frames assigned to it. Whether that be Alternate Frame Rendering (AFR) or Split Frame Rendering (SFR)

I really can't say for sure. They look to have similar design PCBs in spite of the cards' overall length difference. Here is the states, they are both the same price (when pricing the 4GB versions). Personally, I'd have a hard time deciding on anything other than looks and length.
Where are you getting your VRM temp info?

At 1440p and with only a single 290x I don't think you will even be limited by 4gb of vram. Looking at EK's site it looks like the XFX is a reference pcb and the sapphire is not. Both cards still have full coverage waterblocks if that is what you are looking for. If you are looking to stay air cooled I would personally go with the vapor x since it is a better air cooler. If you are planning to liquid cool I would skip both and get the cheaper reference cards with the stock blower style cooler.
