I'm building a gaming computer and I'm definetly getting the Crucial M500 240GB SSD. However, I'm not sure if I should get a 2TB HDD or a 2TB SSHD

Getting a SSHD with a SSD is pointless because you already have high speed storage on the SSD while the HDD is for data. SSHDs are mainly good for OS drives, not data drives.
