SSD for Operating System, HDD for the rest

Please forgive me as I am new to doing my own computer hardware. I built my first computer last year and I installed a 120 GB SSD and a 2 TB HDD on the recommendation of IT at work. I just wanted the operating system on the SSD and the rest on my HDD, however everything has been writing to the SSD. How do I change this as I the SSD is nearly full? Also, can I just move files over to the HDD or does it require some type of mapping? How do I shut down the SSD once I move everything? What am I doing wrong? I have thought of just getting a larger SSD and cloning the current SSD, however, I would like to move all of my music, pictures, movies/videos (essentially the "My Folder" items) over to the HDD and for any new movies added to go to this hard drive as well. How do I do this? Thank you in advance for any help.
