Seeking a lean, mean mobo

Hey, was referred to this site as the goto place for everything computer related by a friend. Hopefully I can get some advice, because I have zero clue what I'm doing minus the research I've tried doing myself.

I am trying to build a computer that can run 5x1 screens in portrait mode. Final resolution will be 2048x5400 (11 million pixels). Basically I need a computer that can run one and a quarter 4k screens. I've read the guide here on motherboard selections, And looked at a lot of rigs others have built, but I am completely lost as far as trying to future-proof the computer.

Granted, I know any computer will be obsolete after 2 years, but my goal is to spend $200 or less per month to upgrade one part at a time. Primary usage will be EVE Online, Skyrim for now. Monitors alone is going to cost me deeply, but for now I am primarily looking for a motherboard that will last a good 3, maybe 4 years. I do know I have to use Radeon graphics cards (probably 2, but I could do 3...just I've read it suffers from diminishing returns). So if someone could help me out with a motherboard and a decent i7 processor, I would greatly appreciate it. I have an EATX case already, 3 220mm water cooled ready, and a 1100 power supply.

Actually the X99 boards replaced the X79 boards. Both are for high end graphics rendering and editing programs and other professional uses. They are both good for gaming too but overkill for gaming.

Wouldn't an X99 be a better choice/newer? I was under the assumption that it was what replaced the Z97s. I was looking at LGA2011-3 boards. What is the difference(s)?
