i5 multi-monitor gaming system build w/ $1000 - suggestions on VC, PSU, case, mobo

I am looking to maximize my budget to get the most value out of a system with the following criteria:

APPROXIMATE PURCHASE DATE: Next Month
BUDGET RANGE: $1000

SYSTEM USAGE FROM MOST TO LEAST IMPORTANT: Gaming (single monitor), three monitor setup for stock trading software, minor amounts of streaming

PARTS NOT REQUIRED: 8+ TB of HD’s, keyboard/mouse, monitors, sound card, Operating system, CD/DVD drive

PREFERRED WEBSITE(S) FOR PARTS: Newegg, pcpartpicker

PARTS PREFERENCES: Core i5 – K version is not required as I will not be overclocking, video card under $325 (this is absolute max, thinking R9 290?) SSD 128 for boot drive, liquid cooler for CPU (H100 vs H50?), highly rated PSU

MONITOR RESOLUTION: highest I can get on 1 monitor for gaming

ADDITIONAL COMMENTS: Couple things – I like ASUS/MSI mobos, not opposed to a smaller form factor but I don’t really care, micro or mini atx case of preference would be the BitFenix Prodigy but I need to fit a potentially large card inside, I will not overclock the CPU, I want a clean power PSU highly rated, I need to be able to run a 3 monitor setup with at least 1 monitor running games at the highest possible settings while streaming.

Gaming while streaming, you want an i7 class CPU. CX series PSU's are not very good. Evga B2 much better. Water cooling is a waste on such a CPU. The stock cooler or a coolermaster hyper TX3 is plenty. Unless you want to run dual GPU at some point, an H97 board is all you need as well. Something more like this.

Thanks for the reply Demo, will review the build. One note - I don't need any extra storage besides a system boot SSD with about 128gb for a few programs as well. I have over 8TB of storage currently that will be going into the system.

Logain thanks for the reply. The Xeon E3, never realized what this actually was, a trimmed i7 without the HD graphics I will never use. H97 looks great, if I have a few extra dollars I can spend up for a MSI gaming board though it doesn't seem very nessecary.
Lastly, the graphics card. I noticed you picked this particular one in both builds. Is there a reason for this card? I know AMD based cards well, I am not very farmiliar with Nvidia. The GTX 970 is similar to a 290x right?

Last thing - say I take streaming out of the equation, is it worth spending up for the Xeon still? If not, which i5 would be a good target?

To clarify, when I say streaming I mean I am playing a game maxxed settings on 1 monitor and watching twitch tv on another monitor then have chrome with 10-15+ tabs on the third monitor. Thanks my typical night. I myself will not be streaming my own gameplay, simply watching others.

I do not plan to OC my cpu, call it lazy. With that said, would an i5 handle the above example workload without any obvious problems? I am not familiar with how the hyper threading in i7's benefit multiple applications if they do not specifically use hyper threading.

If an i5 is the right value choice and can handle the load, is it worth spending $45-50 more on the i5 4690 for the heightened core speeds or better to go with something like the i5 4460?
