A few questions about RAM+Startup

Hello I just received my new Computer.

The Specs are:

i7 4790k
gtx970
8gb ram

I was wondering if 8gb is truly enough for gaming? Like most demanding games. I tested it with Skype, steam, league of legends (in game) +2 internet tabs with videos open and I got to 4gb of ram usage. I know I'm only 50% but I just get worried if I can't even have 1 thing open while playing demanding games.

Also I have about 60-70 process open on a new computer. Is this normal? Can I use msconfig to not load "start-up" and disable and non Microsoft services ect...

I got Windows 8.1

Yep, I'd clean up the Start-up in MSCONFIG (or might try a free program called WinPatrol (comes in very handy), as far as DRAM, for strictly gaming, 8 GB shoould suffice, I normally recommend 16GB as the min for a new build, so you won't have to worry about upgrading 6-months to a year down the road
