Is it plausible that by 2017 there will be a GPU that's capable of running a 4k display at 120hz?

Solution
I think it depends on the market. Right now the biggest market is 1080p, so that is their biggest priority. Yes, they are working on higher resolutions so not to miss the market change, but until higher resolutions go from enthusiast to mainstream, they will be a future tech.

Directly to your question though. I believe it possible, but unlikely. Not for design or tech limitations, but because as I said above, the market isn't truly yet demanding it. If 4k TV's and monitors become the norm and prices drop sufficiently, we will likely see a burst in GPU horsepower.

At this time, there is no downside leaving 4k to crossifre/sli setups. Just boosts their sale a bit.

On low/medium settings, maybe. Not with everything jacked up. Too much of a jump from where we sit right now, with any single gpu not even able to push 60fps alone yet.

I'm aimed at a triple 4k monitor eyefinity/surround setup atm, waiting to see what the 300 series and 980 ti bring us in terms of performance. (w/ 60fps for gaming I mean)

Would LIKE to be able to do it off 3-way SLI/crossfireX and avoid having to go with four. We'll see what happens I guess.

It's possible right now....the only reason why "not" is because of video port bandwidth, you can run 4k at 144 fps on very many games on high-max settings on powerful single card solutions like the GTX 980, not the most graphically demanding games of course, but games like League of Legends, Dota 2, CS:GO, and so on.

It largely depends on how demanding the game is and how optimized it is. By 2017 a more realistic question would be if there would be an 8k display at 240hz.
