adding existing SSD to new build (not OS)

OK let’s see if I can explain myself correctly. I am building a new PC to replace my old laptop. I have a new SSD and HDD and a new OS. I will be putting the OS (win8.1) on the new SSD and using the HDD for storage.

My questions are, can I add my laptop SSD as a third hard drive? I would like to delete my OS from the old SSD but keep all of the data and programs.

Is it possible to delete the old OS and keep everything else?

Will I be able to use the software (Microsoft Office) still from the laptop SSD?

You can keep the data, but not the programs. There are a lot of shared components of Mocrosoft Office, that are installed to the (old) windows directory. Beside that, you will lose all the registry entries need to run the programs.
