XMP vs OPTIMAL ASUS

Hi all, =).

im staring to OC my pc but i encountered 1 problem: i get into UEFI BIOS and choocse the XMP option. Then i save and exit amd start the pc. everything is good. Then i turn off the pc and unplug the electricity, wait like 20 minutes, turn the pc ON and it appears: "overclocking failed please enter setup to reconfigure your system asus"

BUT when i choose between "power saving", "normal" and "asus optimal" and choose "asus optimal" the message doesnt appear and pc works just fine (no XMP option enable)

I just wanna know why XMP option isnt working...and learn a bit more about OC...

PCs shows these:

1) without OC:
RAM: 1333mhz
CPU: @3400mhz

2) with XMP, ONly works the first time. Next time i turn on pc it fails.
RAM: 1600mhz
CPU: @3800mhz, TARGET: @3800mhz

3) with "Asus Optimal". Works fine...but i wannna know how to reach TARGET VALUE.
RAM: 1600mhz
CPU: @3440mhz (lol), TARGET: @4360mhz

These are my specs:

CPU: Intel i7 2600k
Mobo: Asus p8z68 V PRO
RAM: Corsair Vengeance 4Gb 9-9-9-24 (2 unidades)
Hard Disk: Seagate barracuda 1tb 6gb/s
PSD: CoolerMaster Silent Pro 700w
Case: thermaltake V4 Black Edition
Monitor: Samsung XL2370
GPU: GTX 970 GYGABYTE G1

Hoping for any kind of related info. thanks...

PD: i know XMP is like a mini OC lol...
