So, I have a PCI-e 6+2 connect which would make up the required 8pin for this GPU; however, on the other end that plugs into the PSU is only 6 pin. My question is will this work? or is the 6 pin output on that side of the PSU too low for the GPU to run properly. I don't want to put unnecessary strain if this is not the correct way to set this up.

I do not have anymore 8pin to 8pin connectors.

The PSU I'm using is a Coolmaster v700 Series and the Card I'm purchasing is a GTX 970 Asus Strix.

Most of the 8 pin PCI-E cables are built this way.

It will work just fine. The "extra" two pins are grounds. The gauge of wire on those two wires should be able to handle the extra current that is returning on them.
