Best GPU option for 3 monitors at 1080p?

Looking for advice on best replacement for my GTX 670 since I've upgraded to 3 monitors (5760x1080). I want something good enough that will last about 2 years and be able to bump up settings on X-Plane flight sim (HDR lighting, AA, etc.). I can budget as much as $1000. Can also get one decent card now like a 980 and get a second next year for SLI if that's the best option. I'm leaning toward 2 x 980 SLI but not sure if that's overkill. Open to other options. Thanks!

Go for a 980 now. It is a good idea (as you have planned) to get the second one a year later as by then, the price will fall substantially and for now, the single 980 is sufficient.
To answer your second question, no, it will not be an overkill. Remember, the games always keep up with the GPU, so within a year and a half, you will see games that will start to challenge the 980 on multi monitor setup. Then you will have the flexibility to either SLI or even go for a newer gen GPU.

for a resolution like thyat, i recommend these. you could go 980, but this has more vram.

the cards are $850 but i assume you dont have a psu to support them so a good psu was included
