Would you guys trade a Asus Strix 980 for two R9 290x or one R9 295x2 Radeon Sapphire?

The 295x2 is ~22% faster at 1080p, and ~70% faster at 4k.
Its an interesting choice. You are trading a efficient card for ones or one that demands a large amount of power and produces a large amount of heat. Not to mention new vs used.

If you had the airflow and power supply for it, maybe.
It depends the condition the cards are in, and the resolution.

Flat numbers it would be better, but there are other factors to consider.
