Physical memory maxed during work. More RAM?

So I'm working on a large project and simulation is taking a big part in it.
When I start these simulations, my physical memory maxes out and I can't do anything during this process.
In other words, while the simulation is going, I try to move my mouse and it lags heavily.

From closer observation I noticed the CPU does go to about 96% within the first couple minutes then slowly drops to about 70%.
As for my Physical memory, that value skyrockets to about 6000 MB and stay kind of linear between 5800 MB ~ 6100 MB. Stays at 95% and over through out the whole process.

I guess my question is, should I upgrade my RAM and if so, should I upgrade to 16GB or 32GB?

Any help is appreciated!

CPU: Intel i7 3770k
RAM: 8 GB

Yes, you need more RAM. It is always feasible to increase RAM if the usage frequently crosses 80%, which is your case. 16gb should be sufficient, though more is always better. If you have 4 RAM slots and use 1X8gb, you can first buy another identical 8gb stick and see the performance and then buy more RAM if it is needed. Also ensure the new RAMs operate at least in dual channel mode, as it will give you up to 15 - 20% higher performance for the same capacity.

Yes, more memory will definitely help. As for the amount, that depends on the particulars of the work that you're doing. You may wish to ask for advice from the publisher of the software that you are using.

Yes, I'd look to 2x8GB, 16GB should suffice and if you like you could attempt to mix your old with your new, no guarantees, but if any problems in trying that give me a shout, if we can get them to play then you would have an 8GB 'bonus' and 24GB in dual channel
