No reason to get that motherboard with that CPU.

Firstly, it is a generation behind your CPU so compatibility is not guaranteed out-of-the-box.
Secondly, you could easily find a cheaper motherboard with the same functionality that you require. Find a nice Z97 (not 87) motherboard for peace of mind.

Otherwise your build looks good.

The sound card is so i can run all the speakers in the 1000 W sound system in my house

But shouldn't an i7 with faster speeds run video editing software much faster (or at least thats what i've read)

Audio will generally run just fine off the built in audio system on the motherboard.
i7? If you are doing a LOT of video rendering, every day, all day....then yes. For typical use, probably overdone.

any reason you decided to choose the most expensive motherboard possible? You don't need it - you could save $150 by getting something like a Z97-A and you wouldn't see a difference in performance.

Also, a GTX 980 should not cost that much, if you still wanted ASUS you could get the 980 STRIX for $677 or something

The only thing is that only the high end ones have built in wifi and bluetooth.
As soon as i spend the 150 on a bluetooth and a wifi adapter i might as well buy this one (unless im overlooking something)

Another question i have kicking around is that for fans. is there some sort of automatic monitor that adjusts them accordingly? or are your only choices plugging them into the psu and running one speed or a fan controller?

if you plug them into your motherboard's fan headers (PWM) then the fan speeds will adjust according to the fan curves set by the motherboard. Alternatively, you can plug your fans into a fan controller (which can either be sliders, dials, or touchscreen) to manually adjust the speed of your fans.
