Hello, I have a Seagate ST2000DM001-1CH1 2TB Hard Drive that only detects that it is connected to a SATA 1 Port rather than a SATA 3 Port.

I am using Ubuntu by the way.

Correct me if I am wrong, but Gigabyte doesn't provide motherboard drivers for Linux, and I checked the additional drivers and the only drivers there are for the Nvidia Graphics Drivers.

I admit I don't know much about Linux, but you would expect that it would be able to detect the maximum speed if the chipset that he has has drivers in Ubuntu. It seems like it's playing it safe and keeping it at 1.5G because it doesn't know it's a 3.0 port.
